A recent discovery by me... The entire essence of summer can be summed up in three letters: BLT!

Also, Susan checked a book out of the library on gourmet grilled cheese sandwiches. The first offering we tried? Prosciutto, fresh mozzarella, and fig jam. Well, no fig jam--Susan couldn't find it. I substituted pesto on mine, and Susan, after tasting the prosciutto, thought perhaps raspberry jam would work well. And work well it did! We decided that next time, a few slices of red onion would help offset the sweetness of the raspberry, but hey, pork and raspberries have been paired together forever! I shouldn't have been so surprised.
